Quinoa Flour

This flour is obtained by stone grinding quinoa seeds (Chenopodium quinoa). This plant originates from South America and belongs to the same family as spinach and beets.

From a nutritional viewpoint, quinoa is almost a complete food. It has an extremely high content of proteins with a high and almost complete biological value. It is particularly rich in lysine, an amino acid that is only present in small amounts in cereals.

Quinoa contains mainly carbohydrates with a low glycemic index, fats and mineral salts (in decreasing order): potassium, phosphorus, magnesium, calcium, selenium, iron, zinc and copper.
