LA VERGARA ORGANIC TYPE “2” SOFT WHEAT FLOUR
This flour is obtained through stone grinding and partial sifting of a combination of organic ancient and modern wheat varieties in varying percentages (Iervicella, Solina, San Giacomo, Gentilrosso and Bologna), from which foreign substances and impurities have been removed, according to standards.
Type “2” flour has a higher bran content than the previous type and differs from other semi whole grain flours in its darker colour and in the fragrance released after the bread is cooked.
It can be used without being mixed with other flours. Its characteristics make it ideal for making rolls and bread, and also ‘taralli’ hard biscuits and toasting bread. It is also perfect for making traditional home-made bread, particularly in a wood-fired oven. Rich in fibres and mineral salts
