ORGANIC BUCKWHEAT FLOUR

This flour is obtained by processing buckwheat. The mineral salts present in large quantities are calcium, phosphorus, magnesium and copper.

Buckwheat flour is gluten-free and generally has a low protein content, but contains a higher quality of starch.

It can be used to make sweet and savoury baked products, mixed in a proportion between 10% and 30% with wheat flour, or 20% with corn flour to make the so-called Taragna polenta. It is rarely used on its own, as it does not “bind
