Whole Grain Chestnut Flour

Chestnut flour, also called sweet flour, is obtained by stone grinding chestnuts. An extremely fine and ivory-yellowish flour with a sweet taste is obtained. It was a major source of sustenance in mountain areas in the past, due to its high calorie content.

Chestnut flour is an excellent ingredient, rich in carbohydrates and mineral salts. It should be used with a “strong” wheat flour. The best results are obtained using a proportion of 20% chestnut flour to 80% wheat flour.
