Whole Grain Rye Flour
This flour is obtained by stone grinding rye. Rye is a cereal grown mainly in alpine areas, where it is also most highly consumed.
In nutritional terms, it has a high sodium, potassium, calcium and iodine content.
It can be used mixed at 40-50% with wheat flour to make bread, focaccia bread, cakes and biscuits, or on its own in the case of special diets, although it has a minimal number of uses on its own.
